Mini carrots are specially grown and selected to be sweeter than regular carrot varieties.

Carrots are an excellent source of Betacarotene, which the body converts into Vitamin A for good eye-sight - hence the saying carrots help you see in the dark. It also acts as an antioxidant and an immune system booster. Carrots have more beta carotene when they are mature. An added benefit is the fact that their carotene content may increase as much as 55 after harvest.

Wash thoroughly, trim tops (it looks attractive to leave about 1 cm) and trim the bottoms. Steam or boil whole. Alternatively, roast around a joint.


Store in a refrigerator, in the salad compartment, for up to 5 days.


Check that the green tops look fresh and that the carrot itself looks fresh and firm.
